S'mores Bars

Hey Hey Happy Friday to ya! Hope you all had an amazing week! Things are finally back to normal around here since our long vacation. Now that I'm back in my normal routine, I've been a baking fool. 

So the other day I thought I would try and be cool and make up a recipe completely from scratch that was totally awesome and different and one-of-a-kind and blah blah blah. I wanted to make S'mores cookies but kept seeing them everywhere. So I thought I'd be totally unique (not really) and make these super yum S'mores Bars all on my own. Well needless to say, I failed. Here's why. I made them straight from scratch and totally thought I was too good for flour...

Note to self: You need flour to bake! Unless it's a cheesecake, you pretty much always need flour. That is the reason these didn't turn out well at all. I thought I could substitute flour for graham crackers and all would be fabulous. To say the least, these don't come close to resembling any kind of "bar" I've ever seen.

So why am I sharing this with you if they didn't end up AT ALL like I thought they would? Because they taste absolutely amazing! They seriously are so addicting. I've had numerous people try these and they are hooked. It's one of those recipes that may not "look" good but tastes flipping delicious!
All I did was start off making these with all things S'mores, added some stuff here and there, and then topped the batter off with more S'mores toppings. Baked it for a little bit and pulled out a boiling pan of gooey awesomeness.
These had to cool for a while, but once they had the result was amazing. These aren't the type of bars you can pick up and take a big bite of, but you can definitely pick at them with your fingers, scoop up with a spoon, or even lay over some ice cream. Either way you enjoy them, they'll taste awesome! Promise! Don't judge a bar by its cover :)

Ingredients:
1/2 Cup butter, softened
1/4 Cup + 1/8 cup sugar
1/4 Cup + 1/8 cup packed brown sugar
1/4 Cup peanut butter (just bc I love peanut butter)
1 egg
1/3 Cup heavy cream
1 tsp vanilla
1 Cup graham crackers, finely crushed
1/4 Cup flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 Cups chocolate chips
1 Cup mini marshmallows
2-3 graham crackers 

Directions:
Preheat the oven to 350 degrees. Grease a 9x13 pan and set aside.

Combine the butter, sugars, and peanut butter (you can leave this out if you aren't a peanut butter fanatic like me) in your mixer. Mix until smooth. 

Add in the egg, heavy cream and vanilla.

In a medium bowl combine the graham crackers, flour, baking soda and salt. If you want, you could try to add an extra cup of flour here to thicken up the bars. I didn't do it this way and therefore don't know how it will turn out, but feel free to try and let me know how it works out. :)

Mix together the dry ingredients with the wet. Stir in the chocolate chips.

Once combined, pour mixture into the greased pan. Using a spatula, spread the mixture around until evenly distributed across the pan.

Top with 1/2 cup of chocolate chips, the marshmallows and the graham crackers. Crumble the graham crackers in your hand as you sprinkle them around, keeping them small whole pieces.

Bake for about 20 minutes, or until the bars are boiling. Remove and allow to cool in the pan completely. Run a knife along the edge when they come out before they cool.

Cut into whatever size pieces you want and either eat them with a fork, your fingers, over ice cream, or heck on crackers if you want. It may look weird, but I swear on the cookbook they are truly delicious!
