Homemade Cheese Fries

Happy Thursday to ya! I hope everyone has been having a great week. Mine has been full of online shopping, Christmas decorating, and eating. Lots of eating. I feel it's that time of year where you can indulge and not feel bad about it. YOLO people!

So when I stumbled upon this recipe I knew I had to try it and make it my own. And try I did. Let's see...cheese? Check. More cheese? Check. That's really all I need, but then you add in homemade fresh cut fries and I'm sold!!

I'm not going to lie, I have had a fear of deep frying for a while. A few months back I tried to make homemade fried chicken. I like to think of myself as still a new cook, a novice if you will. I thought fried chicken would be so easy and there was no way I could mess it up. Ohh but I did. I'm talking I put the chicken in the oil and walked away for about four minutes after letting the pan heat for probably 15 minutes...

The smoke detector was going off, the kitchen was full of black smoke and my husband was running around trying to figure out who had let off the smoke bomb in our house. There was no bomb. I had just burnt the non-existent feathers off the chicken. Ever since then I've been afraid to try deep frying. So when I decided to try this recipe I was actually nervous about it. But I put on my big girl pants, rolled up my sleeves and got to frying. This was so easy and so delicious. Here's what you'll need:
First you'll want to cut up the potatoes like I show above. Lay them on a paper towel and let them dry out for a few minutes:
While they are drying out, heat your oil. Once it's hot enough you'll add in the fries:
While the fries are frying, mix together all the ingredients for the cheese sauce. Heat over medium heat and stir often until the cheese has melted together.
When the fries are a nice golden brown set them on more paper towels and sprinkle with salt. Serve with the awesome cheese sauce...then take a nap :)
Ingredients:
Fries:
4 potatoes, peeled
About 1/2 Cup vegetable oil
Salt

Cheese sauce:
1 Cup Mexican Cheese
1 Cup Mozzarella Cheese
1 Cup milk
2 tsp paprika
1 tsp salt
1 tsp corn starch
1 tsp garlic powder
1 tsp pepper

Directions:
For potatoes: Cut potatoes into thin 1/2 inch strips. Heat oil and place potato pieces on a paper towel to drain off the extra water. Add two potatoes to the boiling oil and cook until they turn golden brown. You know the oil is ready when you put a drop of water in it and it spatters. Transfer to another paper towel to allow extra grease to fall off and put in the remaining potatoes. Sprinkle with salt. If you have a big enough pan to do them all together, go for it. Mine wasn't big enough.


For sauce: Combine all ingredients for the cheese together in a pot on medium heat. Using a whisk, stir ingredients continually until it's all melted together. Add on top of fries. Dive in and enjoy!

  3. Oh, I will be making these this weekend for my guys! We're vegans with a dairy allergy, so I will use Daiya mozzarella shreds and Go Veggie Mexican shreds. YUM!

    These fries look wonderful. I have a question...what type of Mexican cheese to use.
    Queso cheese...or shredded mexican cheese that is bought in a package??

    1. I used Kraft Shredded Mexican Cheese with a Touch of Philadelphia cream cheese. It melts really well. Hope you like it!
