Cheesy Garlic Chicken Biscuits

The other night hubby, as politely as possible, let me know he was so sick of plain chicken! looking for something new for dinner. My first thought: Pinterest! I get so much inspiration from that thing! But that night, nothing was popping out. My second thought: Girl, you're a great cook! Make it up yourself! So I did.

I've told you before about my obsession with bread and cheese. This meal fit the bill perfectly. All I had to do was open up the fridge and grab things we like. This is what I found:

Bread? Check! Cheese? Check! More cheese? Double check! Perfect! I started out by mixing up the cheeses, sour cream, & chicken. I decided at the last minute to grab some dill, too. Love dill!
Then I flattened out half of the biscuits and placed them on a lined baking sheet. 
 I took large scoops of the chicken/cheese mixture and piled it on the biscuits.
Then I took the other half of the biscuits, flattened them as well, and placed them over the chicken.
Next, I mixed the melted butter, salt and garlic powder and coated the biscuits with it. I.mean.coated!
I popped them in the oven and about 15 minutes later we had a hot, golden brown, gooey, chickeny (word? No.) creation any family member will love! At first taste hubby said it needed some kind of sauce. 4 biscuits later he said he was wrong. They are great as is. Or you could substitute pulled pork, shredded steak, ground beef, or even some kind of fish (ok, maybe not fish...I hate fish!). You can truly make this your own...just make sure you make it :)
This recipe made a ton! Way more than 5 biscuits. This is what I did with the extra:
Nothing went to waste. It was a great dinner with a great guy. Warm, cheesy, bready (also not a word) awesomeness!

Ingredients:
2 Cups shredded chicken
10 bisuits
1-2 T sour cream
4 oz cream cheese, softened
1/2 Cup shredded sharp cheese (or any kind you prefer)
1/2 tsp dill
1/8 tsp garlic powder
1/4 tsp salt
2 T melted butter

Directions:
Line a baking sheet with parchment paper. Preheat oven to 350 degrees.

Combine the chicken, sour cream, cream cheese, shredded cheese and dill in a bowl. Flatten half the biscuits onto the baking sheet. Scoop the chicken mixture onto the flattened biscuits. Take the other half of the biscuits and cover the chicken mixture with it. Pinch the sides together really well to ensure none of the cheesy awesomeness leaks out of the sides. Combine the melted butter, salt and garlic powder together and brush onto the biscuits. Be generous! Cook for about 15 minutes or until the biscuits turn a golden brown. Serve and enjoy em!
