Tortilla Pizza

Hey All!! So don't hate me but...I'm on VA CA TION!!! It's really more of a staycation, but still. I don't have any Zumba classes to teach, and as soon as the clock strikes 6:15pm tomorrow, Hubby will be on vacation with me. Yay! Nothing but lazy days and lots of eating ahead of me. Awesome. 

So to kick start my week of doing absolutely nothing, I decided to make one of my favorite lunches. This is a meal I recently tried out and immediately fell in love with. Two reasons I'm now obsessed with this: 1. It's pizza so duh. 2. I get to eat pizza my way and HUBBY CAN'T STOP ME!! Why am I shouting that? Because in the almost five years we've been together I have only been able to eat pizza the way I want it when we happen to go to a pizza place that happens to have all the toppings I like and happens to have the sauce I like and happens to make their pizza in other sizes besides Large. See if I get a large, I end up with tons of leftovers and barely get around to eating it all. You can imagine how many times that's happened (not many!). So I came up with a solution that is super inexpensive and crazy easy to make! Welcome to my life Tortilla Pizza!

I'm sure there are plenty of you out there that have already thought of this, but I hadn't. And now that I have, it's like...it's like that moment in college where you decide to actually open a book and start studying and realize how easy (college) life could've been this whole time. It's like realizing if you had just always told your parents the truth, (high school) life could've been so much better. 
I know I've said on here before it's the little things in life that get me...and it's true. I seriously think my life will be easier and better now that I've made this. And it only takes a few steps!
Ha I say it will be easier and better because we have pizza all.the.time and Hub and I always have to compromise on what we get because we don't like the same toppings. Like at all! He likes tomato sauce, sausage, mushroom and onions and I like white sauce, pepperoni, green olives and green peppers (I didn't have green peppers otherwise they'd be in the pictures :). Marriage already comes with so much compromise; it'll be nice to have a simple way that Hubby and I can both have what we want and still keep the other one happy! And it's way cheaper than ordering pizza. Success!
Oh and of course my little fluff monster, Zen, was more than willing to help me take my pictures! Seriously the cutest dog ever!
Ingredients:

1 tortilla
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1 Tbsp Parmesan cheese
2 Tbsp Alfredo sauce or tomato based pizza sauce or whatever sauce you like
1/2 Cup Cheese- again whatever you like. I used mozzarella and Italian blend
Favorite pizza toppings- I used 10 pepperonis and four olives cut in half

Directions:
Set your toaster oven to the "Toast" setting. Or preheat your oven to 400 degrees. 

Take out your tortilla and set aside.

Mix together the salt, pepper, garlic powder, Italian seasoning, and Parmesan cheese in a small bowl. 

Add the Alfredo and mix together. Spread the Alfredo mix onto the tortilla.

Add the cheese and then the pizza toppings.

Bake for about 8 minutes or until the tortilla starts to brown a tiny bit on the edges.

Remove, let cool for about a minute, slice and enjoy!! I've had this for lunch the past three days now and still can't get enough.

  1. Yum! Why haven't I thought or seen this before?! I love pizza too & I've only made them on the English muffins. This will be perfect for a quick lunch next week. Thanks for sharing!

  2. We have made Tortilla Pizzas for several years now.....started it when I had several hungry kids, hungry husband...........nothing planned and needed food NOW! Kind of an emergency (those who have several growing boys will understand that :) They are fast and easy.....and thankfully we had tortillas, pasta sauce and cheese on hand that first time.....sometimes we add pepperoni or bacon or peppers and onions onto the basic....but we still enjoy them. Thank you for posting this. :) Gentle Joy

  8. I go on, and on, and on... about how I hate "fat" pizza - all dough and no action! Now I have a solution for when my family (with fat pizza love) want pizza - I can make this!!

  10. Yum. I like a thin crust so this is perfect. It doesn't get any thinner than a tortilla!

For a slightly different texture (and usually a little bigger), you could also check by the deli department where they usually have pita bread, etc. and try this on Lavash (a flat bread sometimes round, sometimes not - varies with brand). Some people only like thin crust, or only like thick crust - I don't care what kind of crust it is so long as it's GOOD! As for toppings, I'm especially partial to a little ricotta, pesto, caramelized onions, and tomato. [#PinItThurs]
