There are so many wonderful recipes out there that call for shredded chicken...nachos, quesadillas, casseroles, soups, etc. And there's some days where I don't have time to wait for my chicken to thaw out. I hate putting chicken in the microwave to thaw too. So what do I do? Boil it! It's much easier than some people might think, and it cooks my chicken perfectly every time. So whether you're making a shredded chicken dish, or just want some juicy chicken breasts, here's a great tutorial that won't let you down:
Step 1:
Place chicken in the bottom of a deep pan. Depending on your recipe, you'll want to choose your liquid. In many cases I use water, but easily could substitute chicken broth, apple cider, or dry white wine. You can also add things to the water for more flavor like onions, garlic, bouillon cubes, celery, carrots or even lemon peels. Once I did water and hot sauce to make pulled chicken nachos. It really just depends on what flavor you're looking for.
Step 2:
Pour enough liquid in the pan to cover the chicken and bring to a boil over medium high heat. Reduce the heat to simmer and cook at these times based on your chicken:
Bone-in, skin on breasts: About 30 minutes
Boneless, skinless breasts: About 15-20 minutes
Boneless, skinless, sliced or cubed breasts: About 10-13 minutes
Step 3:
Remove the chicken from the pan and shred in a large bowl or keep intact and serve with sides of your choice. You can use the shredded chicken immediately or cool and store in the fridge for up to three days. I made me some Quesadillas!
