Place chicken in the bottom of a deep pan. Depending on your recipe, you'll want to choose your liquid. In many cases I use water, but easily could substitute chicken broth, apple cider, or dry white wine. You can also add things to the water for more flavor like onions, garlic, bouillon cubes, celery, carrots or even lemon peels. Once I did water and hot sauce to make pulled chicken nachos.
