Baked Mac & Cheese with Chicken for 2!

So I'm sitting on my couch eating some football munchies watching the prettiest snowfall I've ever seen. It's so white...and so MUCH! I'm talking we've already had inches fall and it didn't start until 7am this morning. Hubby and I are hunkered down and not going anywhere until we have to. I hope if you, too, are dealing with this weather you are safe and curled up on the couch with a comfy blanket and a significant other/furry pet to keep you warm.

On days like these all I want is something cheesy and easy. One of my favorite easy meals is this Baked Mac & Cheese with Chicken. It's perfect because it makes just enough for two people, but can easily be doubled or tripled to accommodate more people. And you don't have to do chicken, you could do pulled pork, or smoked sausage, or even some ground beef if that's what you like.

Mmm...it's so goldeny (definitely not a word) awesome. Another thing I love about this recipe is the chicken part is so easy. I just boil up some breasts, shred the meat and throw it in with everything else. How do you boil chicken you ask? I give a full tutorial here. Make some pasta while the chicken boils. Then stir everything together in a big bowl, bake and you're done!

Ingredients:
1-2 Cups shredded chicken
1 1/2 Cups cooked elbow macaroni
1 Cup shredded cheese (whatever type you prefer)
1/2 Cup milk
1 egg, slightly beaten
1 tsp salt
1 tsp garlic powder
1/2 tsp parsley
1/2 tsp pepper
1/2 tsp seasoning salt (optional, I love the stuff but feel free to skip it)
1 T butter

Directions:
Preheat the oven to 350 degrees. Grease a 1 1/2-2 qt casserole dish.

Stir together the chicken, pasta, cheese, milk, egg, salt, powder, pepper and seasoning salt in a large bowl. Once combined, transfer to your baking dish and dot the top with the butter. Cook for about 35 minutes. You can tell it's done if you stick a knife in it and it comes out clean. We top ours with more cheese and dive in. Enjoy!
