Well the one good thing about all this snow and ridiculously cold weather is that it inspires me to make awesome comfy foods. Definition of Comfy Foods: a food that is best enjoyed on the couch, in pajama pants (yes its acceptable if you wore them yesterday, and last night), and warm socks, when it's cold outside, preferably in a bowl...it's just easier to eat things out of a bowl. So to
give the finger to the cold get over the cold I made some Crock Pot Apple Cinnamon Oatmeal!
It really is a perfect meal for a freezing cold day like today. I am so over not being able to feel my face after going outside for more than three minutes. This is about the time of year where I start pouting about not living somewhere warm year-round. But Hubby always reminds me how much we love our family and we wouldn't be happy without living so close to them and blah blah blah.
I tease. I do love them and would miss them so much...but with a low of 60 degrees versus -7 degrees I think I'd survive :) And you know they'd all come visit!
This recipe was so simple. All I did was throw everything in the crock pot, gave it a few stirs, cooked and done. I scooped some into a bowl and added more cinnamon to the top. I made sure to leave the apple chunks large to keep enough texture so it wasn't all mushy. Perfect! Full disclosure...this will be mushy oatmeal. If you don't like your oatmeal too mushy, try adding less liquid.
This is my way of giving the cold the finger :)
Ingredients:
2 1/2 Cups old fashioned oats
2 Cups apple juice
2 Cups milk
1-1 1/2 Apples, peeled, cored and chopped into pieces
1/3 Cup brown sugar
1 tsp cinnamon
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp salt
Directions:
Pour everything into your crock pot and give it a few stirs. Cook on low for 4 1/2-5 hours, depending on how your crock pot cooks. Spoon out and enjoy!
I made mine last night and am enjoying a warmed up bowl with a glass of milk as I type. Ooo I wonder if this would be good with ice cream...is it too early for ice cream? Please say no!

This sounds amazing. I make soaked overnight oats almost every night for breakfast in the a.m. and must confess, this sounds much better. Sadly, my Crockpot broke last month and I'll have to put this recipe on hold until I replace it, but I'll definitely be sharing the recipe!
